Chocolate Chip Butterscotch Pie

A slice of my new favorite pie: Chocolate Chip Butterscotch

I have previously used this blog mainly as a forum for comparing home cooked food to store bought convenience foods but I’ve decided to start including some random, new recipes occasionally. Some of these recipes are things I’ve concocted myself and others are recipes that I stumble on during my (extensive) reading of cook books; I am a cookbook addict! Either way, there are some recipes that are just too good to keep to myself and I’ve got to share them with you! My first recipe-you-must-try comes from Sunny Anderson, one of my favorite food network chefs. I don’t usually like chilled pies very much, but I saw her making this creamy, sweet, chocolaty concoction and had to try it. It turned out to be one of those rare recipes that taste way better than you even imagined. I whipped one up (literally) during a recent heat wave here in Hawaii, and everyone agreed it was the perfect dessert for a hot summer day.

While trying this recipe out I also discovered one of my new favorite ingredients: Mascarpone.

I had seen a lot of recipes that use this mild, smooth cheese but had a difficult time finding it. I finally tracked down a tub, tucked away in the specialty cheese cooler at Safeway, and I am now addicted. Does anyone have other recipes that use mascarpone? Please post them in the comments, if you have the time; I would love to try it in some other dishes!
